These air fryer portobello mushrooms are perfectly cooked in 15 minutes! With a quick and simple marinade, these mushrooms are a great side dish or snack! Use them as a portobello burger patty, as a base for mushroom pizzas, or slice and serve in tacos!
Make portobello mushrooms in your air fryer in just 15 minutes! The mushrooms cook perfectly in the air fryer and come out flavorful, tender and ready to be used in a number of ways or eaten as is!
A simple marinade makes these portobello mushrooms taste almost meaty and air frying makes them tender on the inside, and full of marinated flavor on the outside!

Making these Portobello mushrooms really pop with flavor is all about the simple marinade. The acidity of the vinegar really brings out the flavor of the mushrooms while the garlic and herbs give the mushrooms an almost meaty flavor.

To make these air fryer portobello mushrooms, you'll need:
- Large portobello mushrooms
- Olive oil
- Sea salt
- Black pepper
- Minced garlic cloves
- Balsamic vinegar
- Dried thyme
- Dried oregano

📖 Instructions
It takes only a couple of minutes to clean and marinate the portobello mushrooms for air frying, then they get cooked in the air fryer for another 9 - 12 minutes. Perfectly cooked and flavorful portobello mushrooms - ready in 15 minutes!
Whisk together the marinade ingredients in a small bowl.
Brush the mushrooms on both sides with the marinade, leaving some marinade over at the end.
Place the mushrooms in the air fryer, tops down and gill side up. Pour the remaining marinade over the mushrooms. Air fry for 5 minutes at 400 °F (200 °C), then flip the mushrooms and air fry for another 4 - 7 minutes.
Allow mushrooms to cool for 2-3 minutes before serving.
Hint: It's important to clean the mushrooms before using them in this recipe. To prepare and properly clean the mushrooms, wipe them thoroughly with a damp paper towel or cloth all over.
This method will remove any dirt gently without the mushrooms absorbing too much water. Don't clean the mushrooms under a running tap! They will absorb too much water and will be mushy after cooking.

Air fry your marinated portobello mushrooms at 400 °F (200 °C) for a total of 9 - 12 minutes, flipping halfway through. Allow the mushrooms to cool slightly before serving.
Air frying cooking times vary and depend on several factors such as your location, altitude, and air fryer make and model, among others.
400 °F (200 °C) is the best temperature for air frying portobello mushrooms. The high heat cooks them quickly while not drying them out.
After air frying, press gently on the stem of the portobello mushroom. It should be tender and soft, indicating that the mushrooms are done cooking!
Some mushrooms come with some dirt on them from the store. To remove the dirt and clean the mushrooms, use a damp cloth or paper towel to wipe down the mushroom until clean.
You don't have to clean the mushroom gills as they are usually cleaner than the rest of the mushroom. However, if yours need cleaning or you prefer not to eat them, the easiest is to use a knife to gently slice the gills off. They can't be cleaned easily so its best to remove them.
🍶 Substitutions
Here are some suggestions for substitutions based on what you have in your pantry:
- Different oils to use - you can use canola oil, avocado oil, and olive oil for this recipe. They all work well in this recipe in the air fryer as they have high smoke points.
- Vinegar substitutes - you can use any vinegar you have on hand for this recipe. White wine vinegar, red wine vinegar, or plain white vinegar all work well. If using apple cider vinegar, add half the amount as it has quite a strong taste.
- Other mushrooms to try in the air fryer - you can also make other types of mushrooms in the air fryer like shiitake mushrooms, normal button mushrooms, and oyster mushrooms too!
🥘 Variations
Portobello mushrooms are such a versatile ingredient that can be seasoned and flavored in so many different ways! If you want to make this recipe your own or spice it up after making it a few times, here are some variation ideas!
- Spicy - add chili pepper flakes, or a pinch of cayenne pepper or chili powder to the marinade to add heat to the dish. You can also dip the mushrooms after air frying into a hot pepper sauce.
- Breakfast version - add scrambled eggs, sliced or crumbled bacon, and cheddar shredded cheese to the tops of the mushrooms for a delicious breakfast!
- Kid-friendly - make a pizza version! Simply top with a tomato sauce, sprinkle of mozzarella, and a small handful of preferred toppings to the mushrooms! I add toppings to the mushrooms after air frying and then place them back in the warm air fryer to melt the cheese.
Seasoning variations - there are so many spices, herbs, and other seasonings to use for this recipe! Here are some of our favorites you can try out:
- Dried Italian seasoning
- Fajitas seasoning (then slice the mushrooms after cooking and serve fajita-style in tacos!)
- Use flavored olive oil like garlic or basil flavored for extra flavor!

🥣 Storage
Store any leftover mushrooms in the refrigerator in an airtight container for up to 3 days. You can eat them cold, straight from the refrigerator, or warm them up a bit in the microwave.
These mushrooms don't stand up well to freezing at all.

- Brush mushrooms well with marinade and add more marinade to the gills of the mushroom, the gills release more liquid during cooking so more marinade keeps them full of flavor!

- Clean the mushrooms with a damp paper towel or cloth, wiping off any dirt. Don't rinse the mushrooms under running water or in a bowl of water as they absorb water fast! Once the mushrooms are clean, cut out the thick stem.4-6 large Portobello mushrooms (depending on how many you can fit into your air fryer)
