  • 1 lb. baby potatoes if using larger potatoes, cut into 1-inch cubes
  • 3 medium carrots peeled and sliced diagonally
  • 1 tbsp. olive oil
  • 1 tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • 1 tsp. dried oregano

Instructions
 

  • Preheat Air Fryer: Make sure to preheat the air fryer fully before adding the vegetables. This helps ensure the high heat necessary for crisping the potatoes and carrots. Set to 400°F which is ideal for properly roasting root veggies without burning.
  • Toss Vegetables with Oil and Seasonings: In a large bowl, combine the potatoes, carrots, olive oil, and all the seasonings. Toss until everything is evenly coated. This fully distributes the oil and spices and prevents unevenly cooked vegetables.

  • Arrange in Single Layer: Add the coated potatoes and carrots to the preheated air fryer basket, taking care not to overcrowd them. Arranging them in a single layer allows for maximum exposure to the hot air circulating for fast, even cooking.
  • Cook 15-20 Minutes: Air fry for 15-20 minutes initially, shaking halfway through. The exact cooking time will vary based on the size of vegetable pieces and your particular model of air fryer.
  • Shake Halfway: Important! After 10 minutes, pause to shake the basket of veggies. This helps redistribute them for the most evenly browned potatoes and carrots.
  • Check Doneness and Continue Cooking: After shaking, cook for another 5-10 minutes until the vegetables are fork-tender and the edges are crispy browned. For extra crispy veggies, cook a minute or two longer.
