  • 1 lb baby potatoes washed and sliced in half
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a large bowl, toss the sliced baby potatoes with the olive oil, lemon juice, oregano, thyme, garlic powder, salt and pepper until well coated.
  • Arrange the seasoned potatoes in a single layer in the air fryer basket.
  • Air fry at 400°F for 15-20 minutes, shaking the basket halfway through cook time, until the potatoes are fork tender and lightly browned.
  • Remove from air fryer and serve immediately, garnished with a little extra dried oregano if desired.
  • Notes:
  • For extra flavor, let the potatoes marinate in the seasoning mixture for 10-15 minutes before air frying.
  • Adjust cooking time as needed based on the size of your potatoes.
  • Watch closely towards the end to avoid overbrowning.

  • If you have a favorite Greek seasoning blend, use that instead of my spice mix! 
  • Don't overcrowd the basket - work in batches for the crispiest roast potatoes.
  • Give the basket a shake midway through for even cooking. Add a couple of minutes to the cooking time for extra crispy potatoes. 
  • Cook time varies on the size of the potatoes - watch closely at the end to ensure a crispy texture and no burning.
