Vegetarian Shakshuka

– Olive oil – Onion – Garlic – Water – Pasta – Pasta sauce – Spices – Heavy cream – Cream cheese

 Sauté diced onions, red pepper and garlic.   Add the seasonings. Stir for 30 seconds until seasonings are fragrant.

STEP 1

Add the canned tomatoes and mix well. – Bring the sauce to a simmer and allow to cook for 10 - 15 minutes. Add the spinach leaves and mix until wilted.

Make a small indentation for the eggs. Make one indentation and crack an egg into it before making the next indentation. Cover and cook for 5 - 8 minutes.

Garnish the Shakshuka with fresh herbs, crumbled feta, sliced avocado, micro-greens and a sprinkle of red pepper flakes.
